Cranana Bread

I don't know what it is about baking things lately. I've always gotta try something different. It's just the way I am. Like instead of baking pumpkin-raisin bread, it somehow mutated into cranberry-banana bread. I don't know how this happened, it just seemed like a good idea at the time.

  • 2 cups flour
  • 2 teaspoons baking powder
  • 1/2 teaspooon baking soda
  • 1/4 teaspoon salt
  • 3 or 4 smashed ripe bananas
  • 1 cup sugar
  • 1/2 cup milk
  • 2 eggs, slightly beaten
  • 1 teaspoon vanilla
  • 3 tablespoons honey
  • 1/4 cup vegetable oil
  • 1 cup cranberries, chopped


Preheat oven to 350 degrees. In a medium-sized bowl, mix together flour, baking powder, baking soda, salt. In a large mixing bowl, combine bananas, sugar, milk, eggs, vanilla, and honey. Mix well.

Add dry ingredients, oil, and cranberries. Mix until just moistened and batter is lumpy. Do not overmix. Spoon batter into well-greased 9x5" loaf pan. Bake in center rack in middle of oven for 65 minutes or until toothpick inserted in center comes out clean.

Cool 10 minutes in the pan. Use a knife to loosen bread from sides of the pan, invert, and allow to cool on cooling rack or plate. Slice and serve.
